Texas FOG & Grease Trap Rules

TCEQ Model Standard

Fully evacuate grease traps or interceptors at least every 90 days, sooner when the grease layer reaches 25% of wetted height, excess pollutants are detected, or noncompliance occurs. Fully evacuate, clean, and inspect at least every 180 days.
Each pump-out requires a manifest with transporter registration number, generator name, waste amount, signatures, disposal place or facility ID, volume received, and tracking number. The transporter returns it within 15 days after disposal; the generator keeps it for five years.
Model-ordinance penalties are $1,000 for a first blockage, $1,500 for a second within two years, $2,000 for a third within two years, and an additional $500 for continuing violations; service termination can also apply. TCEQ defines the transporter as registered and authorized to transport grease-trap waste.

Austin requires complete emptying and cleaning by a permitted liquid-waste hauler at least every 90 days; 50% of final-compartment wetted height can trigger earlier service, and some establishments need service every 30–45 days.
Corpus Christi requires complete pumping at 25% of overall liquid depth or every 90 days, whichever is more frequent. Written exceptions cannot extend service beyond six months.
San Marcos requires complete evacuation at least every 90 days and complete evacuation, cleaning, and inspection at least every 180 days.
