90-day or 50% cleaning
Requirement: Grease traps must be pumped at least every 90 days, or sooner when grease and solids reach 50% of wetted height.

Permitted liquid-waste hauler
Requirement: Grease-trap waste may be removed and transported only by a liquid-waste hauler with a valid City permit.

Three-year manifests
Requirement: Hauler manifest records after each pump-out must be kept on site for three years.

200 mg/L discharge limit
Requirement: Except as authorized, fat, oil, grease, or similar material may not exceed 200 mg/L instantaneously.
