Illinois FOG & Grease Trap Rules
Illinois requirements combine state plumbing code with local sewer programs. The verified programs below cover the Metropolitan Water Reclamation District of Greater Chicago and Aurora.
Chicago and MWRD
MWRD sewer-construction requirements generally call for a grease interceptor or basin at restaurants and food-preparation facilities. An outdoor grease trap needs a construction detail and cleanouts upstream and downstream; dishwasher discharges must bypass the trap. A Watershed Management Permit is used for covered sewer-construction work.
Aurora
Aurora’s FOG ordinance requires food-service establishments to install an appropriate grease-removal system, follow a maintenance schedule based on device type, and document cleaning and maintenance for at least three years. Records must be available to the Fox Metro Water Reclamation District on request. The program authorizes inspection, monitoring, compliance, and enforcement.
