King County and Seattle FOG & grease interceptor rules

Concrete King County and Seattle plumbing requirements for food-service establishments cooking, preparing, or serving food or drink containing fats, oils, or grease.

FSE interceptor sizing

Requirement: A grease interceptor is required for FOG food service, and it must be sized and installed under plumbing code and manufacturer instructions.

Official text: "A grease interceptor is required where food or drink containing fats, oils or grease (F.O.G.) are to be cooked, prepared, or served. Grease interceptors shall be sized and installed in accordance with applicable plumbing code and the manufacturer’s instructions. Total gallon capacity of fixtures discharging to a hydromechanical grease interceptor shall not exceed 2-1/2 times the rated gpm flow rate of the interceptor."

Rough-in inspection

Requirement: Plumbing work must receive rough-in inspection and approval before it is covered or concealed.

Official text: "Plumbing work shall not be covered or concealed prior to rough-in plumbing inspection and approval."

FOG enforcement

Requirement: Exceeding published discharge limits may result in a Notice of Violation and required plumbing modifications.

Official text: "If these limits are exceeded, a Notice of Violation may be issued, and the facility may be required to modify the plumbing system to come into compliance with published discharge limits."
