Washington FOG & Grease Trap Rules
Seattle and King County
- Food-permit commercial kitchens must install and maintain a grease interceptor. Clean it according to the manufacturer’s instructions; when no instructions exist, keep buildup at or below 25 percent.
- Seattle Municipal Code prohibits FOG concentrations over 100 parts per million and prohibits additives. Maintenance logs and service-provider information must be documented.
- Seattle penalties range from $250 to $5,000. King County plumbing requirements govern approved installation standards.
