Restaurants must install and maintain grease interceptors to prevent FOG from entering the sewer. Interceptors require Department of Public Works approval and must remain accessible for inspection. Owners are responsible for removal and disposal of captured material and must maintain disposal records. Sewer-connection and wastewater work may require permits and fees.
