Tennessee FOG & Grease Trap Rules

- Existing food-service establishments must have properly operating grease-control equipment. New, renovated, or change-of-owner establishments submit a FOG plan. Annual certification is required, and permits are valid for up to five years.
- Pump interceptors completely at least every 90 days and when the 25% rule is reached. Clean traps every 30 days, or every two weeks when capacity exceeds 25%.
- Keep onsite records of date, person, and volume for three years. Approved haulers must supply manifests listing date, time, volume, name, and address, plus monthly pump reports.
- Annual inspection is required. Enforcement can include costs and service termination.
