Food-service establishments must register with Columbia Water, install properly sized grease traps or interceptors, and maintain the equipment to prevent sewer discharges. Clean equipment at 25% capacity or every 90 days, whichever comes first; larger interceptors require cleaning at least every six months. Submit the FOG registration application and manage maintenance records through the city’s compliance system.
