Food-service establishments must install and maintain grease interceptors and use city-licensed waste haulers. Complete pump-outs are required rather than skimming. Outdoor interceptors must be cleaned at least every 90 days or when FOG reaches 25%, whichever comes first. Retain service manifests and maintenance records onsite for three years. Violations can lead to daily fines and utility-service suspension.
