Plan approval documents
Requirement: When fats, oils, and grease separation is required, the applicant must provide all necessary documents to Building and Zoning Services for plan approval.

FOG BMP and cleaning log
Requirement: Food-service operations must develop and implement a FOG Best Management Plan and maintain a Grease Interceptor Cleaning Log.
Official text: "Columbus City Code 1145.20 (B)(PDF, 22KB) requires all food service operations in the City's service area to develop and implement a FOG Best Management Plan (BMP) to handle FOG-laden wastes. A key element of the FOG BMP requires the food service operation to maintain a Grease Interceptor Cleaning Log."
Hauler cleaning-log information
Requirement: Trucked-waste haulers must completely fill out the food-service operation’s Grease Interceptor Cleaning Log or communicate the pertinent information to its personnel.

Grease-blockage cost recovery
Requirement: The City’s rule establishes a minimum cost-recovery charge of $2,000 per typical blockage incident attributed to improper grease disposal.
