Grease-handling facilities

Requirement: Food-service establishments must provide means of preventing grease and oil discharges to the sewer collection system.

Official text: "All Food Service Establishments and other Users shall provide means of preventing grease and oil discharges to the Sewer Collection System."

Approved accessible interceptor

Requirement: Required interceptors must be approved, accessible, and maintained for continuous satisfactory operation.

Official text: "Grease and oil interceptors shall be of a type and capacity approved by the Mecklenburg County Engineering & Building Standards Department and shall be located as to be readily accessible for cleaning and inspection."

Cleaning frequency

Requirement: Outside traps must be pumped quarterly and small under-sink traps monthly or at the Control Authority’s discretion.

Official text: "Outside traps should be pumped quarterly and small under the sink grease traps should be pumped monthly or at the discretion of the Control Authority."

Three-year records

Requirement: Facilities must maintain on-site interceptor records for three years and make them available for inspection.

Official text: "The file shall be available at all times for inspection and review by the Control Authority. Records shall be maintained for a period of three (3) years except for as-built drawing which should remain for the life of the grease trap at the food service establishment."
