New York State

The Uniform Code requires grease interceptors to be maintained under the code and manufacturer instructions, serviced regularly to prevent hazardous conditions, and supported by cleaning and maintenance records.

New York City

• Nonresidential food businesses must use grease interceptors or automatic grease-removal devices in grease-bearing waste lines. A New York City licensed master plumber must install the interceptor.
• Keep grease accumulation below 25% of total liquid depth. Chemical additives are prohibited. Yellow grease collectors must be serviced by a NYC trade-waste removal license holder, with written proof kept onsite for at least one year.
• NYC DEP may inspect facilities. The city brochure lists a maximum penalty of $10,000 per day per violation.

Onondaga County

The county plumbing requirements call for grease containment at food establishments and a 1,000-gallon baffled exterior interceptor.
