Grease-interceptor applicability
Requirement: Grease interceptors are required in commercial, industrial, educational, institutional, and public occupancies that prepare or cook food containing grease.
Official text: "Grease interceptors shall be required in all commercial, industrial, educational, institutional, and public occupancies which prepare and/or cook food containing grease."
Location and sizing approval
Requirement: The Administrative Authority must approve grease-interceptor location and sizing before installation.
Official text: "Grease interceptor location and sizing shall be approved by the Administrative Authority prior to installation."
Outside installation when feasible
Requirement: Grease interceptors must be installed outside whenever that installation is feasible.
Official text: "Grease interceptors shall be installed on the outside of the building whenever such installation is feasible."
Accessible trap maintenance
Requirement: If a grease trap is used, it must be easily accessible for cleaning, operation, and maintenance.
Official text: "If used, a grease trap shall be located to be easily accessible for cleaning, operation and maintenance."
