25-percent cleaning rule

Requirement: When manufacturer instructions do not specify a schedule, Kansas City requires cleaning when solids and grease reach 25 percent of the vertical core sample.

Official text: "If the manufacturer does not provide specific instructions, Kansas City follows the 25% rule, similar to other cities. This rule states that when 25% of a vertical core sample from the interceptor is filled with solids and grease layers, the interceptor must be cleaned."

Three-year maintenance records

Requirement: Food service establishments must retain cleaning and maintenance records for at least three years.

Biennial inspection

Requirement: Kansas City conducts routine sewer-use inspections of food service facilities every two years.
