Missouri FOG & Grease Trap Rules
Missouri requirements are local. The verified programs below cover the Metropolitan St. Louis Sewer District and Kansas City, Missouri.
St. Louis — MSD
MSD recommends cleaning grease interceptors when they reach 60% capacity. Its guidance also prohibits degreasers, emulsifiers, and hot water as substitutes for proper cleaning because grease can congeal downstream.
Kansas City — KC Water
Kansas City food-service facilities must install appropriately sized interceptors covering dishwashing and food-preparation drains. Clean them according to manufacturer instructions or when a vertical core sample reaches the 25% solids-and-grease rule. Keep cleaning and maintenance records for at least three years, available for city inspection. Kansas City conducts routine sewer-use inspections every two years.
