Food-service establishments must participate in the city FOG Control Program, install approved grease interceptors or traps, and maintain them at the owner’s expense. Interceptors must be completely pumped at least every 90 days; smaller traps may need weekly cleaning. Keep pumping logs, hauler manifests, and inspection reports onsite.
