Food-service establishments must obtain a Grease Trap and/or Interceptor Discharge Permit. The application includes a $100 fee and requires equipment, plumbing, maintenance, and disposal information. Permits renew annually. Clean grease traps at least every 90 days or when grease and solids reach 25% of capacity.
