Food-service establishments must obtain a grease-discharge permit and most facilities must install an outdoor, underground gravity interceptor. The annual permit fee is $225 under the cited fee schedule. Facilities using an automatic device or no device may owe additional monthly maintenance fees ranging from $24 to $100.
