The WRA FOG ordinance requires food-service establishments to control FOG at the source with BMPs and grease-removal devices. Use WRA-certified waste haulers. Service is required at least every three months or when the device reaches 25% of design capacity. Keep maintenance logs onsite for three years and use the WRA forms and certified-hauler list.
