Restaurants applying for a building permit involving a sewer connection must obtain an Industrial Wastewater Discharge Permit. Submit the application through the city process with drainage-fixture-unit data and grease-interceptor sizing calculations stamped by a Hawaii-licensed engineer. Interceptors must be IAPMO-certified and accessible for inspection and maintenance. Noncompliance can lead to fines, permit revocation, or service termination.
