District of Columbia FOG & Grease Trap Rules
DC Water’s FOG program applies to food-service establishments in the District.

Register with DC Water through the FOG BMP portal and install a grease interceptor under the DC Plumbing Code. Gravity interceptors require cleaning every 90 days or at 25% full; hydromechanical and electromechanical units require cleaning every 30 days or at 50% full. Record maintenance in the portal and retain records for inspection. Noncompliance can lead to enforcement.
