Food-service establishments must install an approved active grease-recovery unit, super-capacity interceptor, or outdoor in-ground interceptor with at least 1,000 gallons of capacity. Register the equipment with MDC every three years. Maintain cleaning and maintenance logs for inspection; facilities with limited FOG potential may seek an equipment variance.
