Three-month pumping

Requirement: Restaurant grease interceptors must be pumped completely at least every three months.

Hauler volume record and receipt

Requirement: A licensed grease hauler must record the volume of grease and liquid removed and provide a receipt.

Official text: "A licensed Grease Hauler should record the volume of grease and liquid removed and provide a receipt."

Restaurant trap inspection

Requirement: Sacramento's FOG Control Inspection Program performs routine inspections and enforcement of FSE compliance and verifies grease-removal-device maintenance and performance.

Official text: "The DOU Wastewater and Drainage Division oversees a FOG Control Inspection Program with two dedicated full-time FSE inspectors and a Supervisor managing the process for completion of scheduled inspections. This inspection staff has the primary responsibility of performing routine inspections and conducting enforcement to ensure FSEs are in compliance with the City’s ordinances. Inspection staff are also responsible for verification of the maintenance and performance of the FSE’s grease removal device."
