Phoenix
- Food-service establishments preparing food onsite must use a grease interceptor. Hydromechanical units serve up to four fixtures; gravity units are used for more than four fixtures or for a garbage disposal or dishwasher.
- Hydromechanical units must be fully pumped and cleaned every 30 days, and never later than 90 days without a variance. Gravity interceptors must be cleaned at least every three months without a variance. Any interceptor over 25 percent capacity must be fully cleaned by a licensed pumper.
- Keep records and invoices onsite for three years. Phoenix inspections are unannounced, and plan review is required for installations or replacements. Chemical additives are not permitted. The minimum gravity-interceptor size is 500 gallons.
Tucson
Tucson sizes gravity interceptors by drainage fixture units, with a 300-gallon minimum. The Pima County Regional Wastewater Reclamation Department reviews the sizing.
