Grease-interceptor service interval
Requirement: Food-establishment grease interceptors must follow the current tariff interval, or at least quarterly when no interval is specified.
Official text: "The grease interceptor, if installed, must be maintained at the time interval specified in the current version of the Anchorage Wastewater Utility Tariff for Wastewater Service. If no specific interval is specified in the Tariff for Wastewater Service, grease interceptors must then be serviced at least quarterly or as often as necessary in accordance with AMC 23.25.1014.1 – Grease interceptors."
Maintenance records
Requirement: A food-establishment permit holder must make grease-interceptor maintenance records available to an inspector on request.
Official text: "Permit holder must make grease interceptor maintenance records available to an inspector upon request."
Compliance re-inspection
Requirement: The department may conduct re-inspections to verify food-code compliance, and the inspector must complete the inspection in full.
Official text: "The department shall conduct inspections as follows: **** **** **** 2. Re-inspections. The department may conduct re-inspections to verify compliance with this chapter. When a re-inspection is conducted, the inspector shall complete an inspection in its entirety."
Enforcement and fines
Requirement: Noncompliance can lead to permit refusal or suspension, closure, and civil penalties or fines.
Official text: "If a person fails to comply with this section, [INCLUDING FAILING TO SUBMIT TO AN INSPECTION UNDER SUBSECTION C., OR OPENS OR OPERATES A FOOD ESTABLISHMENT CONSTRUCTED OR REMODELED IN A MANNER DIFFERENT FROM THE PLANS APPROVED BY THE DEPARTMENT, OR DOES NOT SUBMIT PLANS FOR REVIEW, OR THE CONSTRUCTION, REMODELING, PLANS, OR OPERATION VIOLATES A PROVISION OF THIS CHAPTER,] the department may: 1. Refuse to issue a permit; 2. Suspend the permit as provided in Section 16.60.320; 3. Issue a notice of closure as provided in Section 16.60.340; and 4. Impose civil penalties and fines as set forth in Section 16.60.350."
